| Vinification: |
The Chardonnay grapes were carefully destemmed. Next, the fruit was soft crushed. The must obtained was then allowed to settle. The now-clarified must fermented at controlled temperatures in small casks of French oak. The Sauvignon grapes were carefully destemmed, then fermented and macerated on the skins at controlled temperatures in stainless steel containers. |
 |
| Ageing: |
After alcoholic fermentation, the wines were blended and racked into French oak barrels, where malolactic fermentation and cell lysis of fermentation yeasts took place.
Bottling took place in June 2005. The bottled wine was aged in temperatured-controlled binning cellars for a minimum of five months. |
