DESCRIPTION
A variety originally from France, Sauvignon was introduced into Friuli under the Hapsburgs and became widely planted in the early 20th century. The wine is refreshing, with a generously wide, distinctive range of aromas, with bell pepper, tomato leaf, mint and box hedge notes.

Vinification: |
The bunches were carefully destemmed and left to macerate for a short period. Next, the fruit was soft crushed. The must obtained was then allowed to settle. The now-clarified must fermented at controlled temperatures in stainless steel tanks, where it matured for about six months. |

Ageing: |
After fermentation, the wine was left on the lees in the stainless steel containers for six months.
Bottling took place in March 2004. The bottled wine was aged in temperature-controlled binning cellars for a minimum of two months. |

Sensory
characteristics: |
Appearance: straw yellow with light greenish highlights;
Nose: varietal, complex, with notes of yellow pepper, tomato leaf and hints of asparagus and pennyroyal;
Palate: structured, intense, with good balance of acidity; soft and harmonious; complex, marked varietal sensations.
The after-aroma is very persistent, with notes of tropical fruit.

Excellent as an aperitif, Sauvignon is also an outstanding partner for asparagus, vegetable soups, creamed pulses and marinated fish. |
